(maint) update build-all.sh
- quote bash vars - handle unknown flags in `getopts` - add `-r` flag in `read` to avoid mangling `\` - remove `$` in arithmetic which gives it PEMDAS characteristic - single quote trap to expand when signaled vs. when defined
